Funnel Cake

 

Ingredients:

  • 1 cup Bob’s Red Mill Gluten Free Pancake Mix

  • 1 cup dairy/non-dairy milk

  • 1 large egg

  • 1 Tbsp melted butter

  • 2 Tbsp granulated sugar

  • 1 tsp vanilla extract

  • Confectioners sugar

  • Oil for frying

Pour about ¾ inch of oil into a shallow pan and preheat.


In a mixing bowl, combine the pancake mix, milk, egg, melted butter, sugar, and vanilla until homogenous. The batter will be a little thick. I highly recommend using a squeeze bottle to get the most control and movement while cooking the funnel cakes.

When the oil is nice and hot, squeeze the battery quickly in a circular motion moving from the center outward, and then any which way you’d like. After about a minute or two, carefully flip and cook for another minute or so. Place them on paper towels or cooling rack before dusting with confectioners sugar.
